Carrot Sandwich

CARROTS 500 GM
ONIONS(FINELY CHOPPED) 2
GINGER-CHILLI PASTE 2 TSP
TOMATOES(FINELY CHOPPED) 2
BREAD SLICES 8
MINT,CORIANDER(CHOPPED) 2 TSP
CURRY LEAVES 7-8
SALT AS REQUIRED
OIL FOR FRYING
MUSTARD SEEDS

METHOD:

  1. Steam cook carrots and grate them.
  2. Heat oil in a pan and add mustard seeds and then ginger-chilli paste.
  3. Add onions and fry till golden brown and tomatoes till water is absorbed.
  4. Add grated carrots,salt,mint-coriander leaves and fry well.
  5. Put this above mixture in between the breads and toast them.
  6. Serve wih ketchup and chutney.
