Milk Burfi

WHOLE MILK 4 CUP
FRESH LEMON JUICE 4 TSP
DRIED MILK POWDER 4 TSP
POWDERED SUGAR 6 TSP
GHEE 6 TSP
CARDAMOM POWDER 1 TSP
SILVER FOIL (VARQ) 2 SHEETS

METHOD:

  1. Heat the milk slightly and curdle it by adding the lemon juice.
  2. Then hang it up in a muslin cloth to drain for 3 hours.
  3. The milk solids are turned into cheese now.
  4. Kneed this well with the milk powder and sugar.
  5. Heat the ghee in a heavy pan and add the cheese mixture.
  6. Stir fry over very low heat until the ghee separates.
  7. Remove from the heat and mix in the cardamom powder.
  8. Allow it to cool slightly. Knead again to blend.
  9. Pat into a flat cake and cool completely.
  10. Cut into squares and decorate with silver foil.
