South Indian Stir Fried Potatoes

POTATOES(CUT INTO HALVES AND SLICED ) 6 LARGE
VEGETABLE OIL 2 TSP
MUSTARD SEEDS 1 TSP
CURRY LEAVES 7-8
GREEN CHIIES(FINELY CHOPPED) 2
ONION(FINELY CHOPPED) 1 LARGE
TURMERIC POWDER ½ TSP
SALT TO TASTE

METHOD:

  1. Heat the oil in a pan on a medium flame.
  2. Add the mustard seeds,green chillies and curry leaves and fry till spluttering stops
  3. Add the onion and fry till golden brown.
  4. Add the potatoes,turmeric powder and salt to taste and mix well.
  5. Cook till potato is done.
  6. Serve hot with chapattis or paranthas.
