Apple Milk Shake

RED APPLES 2
SUGAR 2 TSP
ROSEWATER 2 TSP
COLD MILK 2 CUPS

METHOD:

  1. Peel and cube apples.
  2. Place in the blender jar with sugar , rosewater and milk.
  3. Pour into glass filled crushed ice.

Apple of My Eye

APPLE JUICE 2 OZ
BLACKCURRANT SYRUP 1/3 OZ
WHIPPING CREAM 1 OZ

METHOD:

  1. Blend all the above ingredients with a glassful of crushed ice.
  2. Serve in chilled glass with sprinkled cinnamon.

Apple Rabri

APPLES (PEELED & GRATED) 3
MILK 1 LITRE
SUGAR 4 TSP
GREEN CARDAMOM ¼ TSP
ALMONDS (BLANCHED & SLICED) 8-10

METHOD:

  1. Pour milk in a broad vessel and bring to a boil.
  2. Simmer till milk reduced to half the original quantity.
  3. Add sugar and cook on low heat , stirring continuously.
  4. Add the grated apples to reduced milk and mix. Cook for 3-4 minutes.
  5. Add cardamom powder and almonds. Pour in a serving dish.
  6. Serve hot or cold.

Apricot Sundae

APRICOT (SLICED , DIVIDED) 2-1/2 CUPS
DARK BROWN SUGAR 2 TSP
ORANGE PEEL (GRATED) ¼ TSP
VANILLA YOGHURT 2 CUPS
RASPBERRIES  
SLIVERED ORANGE PEEL  

METHOD:

  1. In a bowl , combine 2 cups of apricots , brown sugar and grated orange peel.
  2. Spoon evenly into individual dessert dishes , then top with vanilla yoghurt.
  3. Garnish with raspberries , remaining apricots and slivered orange peel.
  4. Serve immediately.

Avocado Milkshake

AVOCADOS 2-3
SUGAR ½ CUP

METHOD:

  1. Blend the above ingredients for 3-5 minutes.
  2. Serve with crushed ice and crushed nuts.

Babylove

COCONUT MILK 1 ½ OZ
CREAM ¾ OZ
PINEAPPLE JUICE 2 OZ
BANANA SYRUP ¾ OZ
BANANA 1

METHOD:

  1. Shake well over crushed ice in a shaker.
  2. Pour into a glass and fill with crushed ice.
  3. Garnish with banana slices , and serve chilled.

Badam Ka Halwa

BADAM 2 CUPS
SUGAR 21/2 CUPS
KESAR COLOUR 2 DROPS
GHEE 1 CUP
MILK 1 CUP

METHOD:

  1. Leave the almonds in hot water for one hour.
  2. Remove the outer skin and grind to a paste with the milk.
  3. Make sugar syrup and boil till it reaches a one string consistency.
  4. Add the badam paste and cook till it thickens.
  5. Add the kesar colour.
  6. Add ghee little by little stirring continuously on low heat.

Badam Kheer

BADAM ½ CUP
MILK 2 CUPS
SUGAR 3 TSPS
CARDAMOM (CRUSHED) 4
SAFFRON (SOAKED IN MILK) A PINCH

METHOD:

  1. Boil half a litre of water in a sauce pan. Add the almonds when water is boiling and cook for 2 minutes , remove from the flame and drain.
  2. Remove the skin of the almons and grind to a fine paste.
  3. Boil the milk in a thick bottomed pan. When the milk begins to boil add the almond paste and sugar and cook for 5 mins over a low flame stirring continuously.
  4. Remove from the flame. Add the dissolved saffron and the crushed cardamoms.
  5. Allow to cool and serve chilled.

Badam Pak

KHOYA 500 GMS
GHEE 250 GMS
ALMONDS 300 GMS
SUGAR 700 GMS
CARDAMOM POWDER 2 TSP
ROSE WATER 1 CUP
NUTMEG POWDER ½ TSP

METHOD:

  1. Mix sugar and rose water. Boil it.
  2. Add khoya to make it smooth.
  3. Put blanched almonds and add ghee.
  4. Cook over medium flame till the mixture leaves the sides of the pan.
  5. Spread the cardamom and nutmeg powder on it.
  6. Keep it for cooling. Cut into pieces.
  7. Badam pak is ready to serve.

Baigan Bhaja

BAIGAN(AUBERGINE,EGGPLANT) 100 GM
MUSTARD OIL 2 TSP
TURMERIC POWDER 1 TSP
SALT AS PER TASTE

METHOD:

  1. Cut the baigan lengthwise.
  2. Rub in salt and turmeric.Heat the mustard oil in a pan.
  3. Add the pieces of baigan to it and keep turning the sides to cook evenly on either sides.
  4. Serve hot with chappatis.
